Bacterial cultures

Bacteria are microscopic organisms that can be found in all natural environments, often in extremely large numbers. As a group, they display exceedingly diverse metabolic capabilities and use almost any organic compound, and even some inorganic salts, as a food source. Some bacteria cause disease in humans, animals or plants, but most are harmless or beneficial ecological agents whose metabolic activities sustain higher life forms. Without bacteria, soil would not be fertile, and dead organic material would decay much more slowly. Bacteria are used in making wine, cheese, beer and sourdough bread. A combination of specific bacteria and air-borne yeast (fungus) in sourdough gets better over time and protects itself from contamination by other air-borne agents.

Sugars

In the west on average we consumes an astounding 2-3 pounds of sugar each week, which is not surprising considering that highly refined sugars in the forms of sucrose (table sugar), dextrose (corn sugar), and high-fructose corn syrup are being processed into so many foods such as bread, breakfast cereal, mayonnaise, peanut butter, ketchup, spaghetti sauce.

Fat and oils

Fat is a concentrated source of energy. A source of essential fatty acids, it acts as a carrier of fat-soluble vitamins and it acts as an insulator and a protector of vital organs. Fat also affects the palatability of foods by adding texture and flavour. Lipids are a collective term used to describe water-insoluble chemicals (dissolve in ether or benzene) in the diet and body that includes fats, oils, and cholesterol.
Saturated fatty acids have no double bonds and are solid at room temperature. The most common saturated fatty acid is palmitic acid.
Monounsaturated fatty acids (MUFA) have one double bond and the most common is oleic acid which is found in olive and rapeseed oils, cashews and avocados.
Polyunsaturated fatty acids (PUFA) have two or more double bonds and are liquid at room temperature. The most common PUFA is linoleic acid. Two sources are flaxseed oil and hemp seed oil.
Cholesterol is a type of sterol that is required for the formation of steroid hormones, vitamin D (synthesized in skin from UV rays) and bile salts. Cholesterol is a part of all cell membranes in the body and in myelin . Cholesterol is found only in animal products and is not essential because the body is able to produce its own in the liver. Three derivatives of cholesterol include high-density lipoproteins (HDL), low-density lipoproteins (LDL), and very low-density lipoproteins (VLDL). VLDL mostly transports triacylglycerols to the cells; LDL ('bad cholesterol') which are formed from VLDLs, transport cholesterol to cells; and HDL ('good cholesterol') transports cholesterol from tissues back to the liver.  Foods that are high in fat include margarine, oil, butter, nuts, animal foods, seeds.

Palm Fruit Oil

Palm oil is an edible plant oil derived from the Elaeis oil palm . Current research is showing that Palm Fruit Oil is not as harmful as it was once perceived to be. Palm Fruit Oil is naturally solid at room temperature. This means that there is no need for hydrogenation and thus Palm Fruit Oil is free of trans fatty acids and cholesterol. No excess chemical solvents are used in the processing of Palm Fruit Oil. It is processed through crushing and pressing only.

Canola Oil

Canola oil is high in healthy unsaturated fats (93%), free of cholesterol and trans fat, and thelowest in saturated fat (7%) of any common edible oil. In addition, canola oil is multi-functional with a high heat tolerance, neutral taste and light, smooth texture. The Food and Drug Administration (FDA) has ruled that canola oil is now eligible to bear a qualified health claim on its ability to reduce the risk of coronary heart disease due to its unsaturated fat content. Canola Council of Canada president Barb Isman says the FDA's stamp of approval is proof positive that canola oil's unsaturated fats are really "Good for Every Body"! High-oleic (or high-stability) canola oil was developed for use in commercial-scale food production because it is shelf stable and does not break down under high heat.

Sunflower Oil

Sunflower oil is high in the essential vitamin E and low in saturated fat . The two most common types of sunflower oil are linoleic and high oleic. High oleic sunflower oils are classified as having monounsaturated levels of 80% and above. The sunflower oil can be used in conditions with extremely high cooking temperatures. It may also help food stay fresher and healthier for longer periods of time. Food manufacturers are starting to use sunflower oil in an effort to lower the levels of trans fat in mass produced foods.

Minerals

Minerals are chemicals that do not contain carbon. For a mineral to be considered essential to the human body, it must perform at least one function that is vital for life, growth, or reproduction. There are sixteen known essential mineral elements.
Minerals can be found in water and food. The amount of mineral in water depends on the soil and rocks it comes into contact with. The amount of mineral in plant products depends on the amount in the soil and water. Commercial farming using herbicides, pesticides and chemical fertilizers cause soil to become depleted vs organic farming methods which maintain a balance of minerals in the soil.

Potassium Sodium 

Potassium and Sodium are electrolytes (compounds that ionize in water which can then conduct electricity).  Forty percent of salt is sodium, and because salt is so widely used to enhance flavour, preserve foods, and because people like it, it is not likely that someone consuming a typical North American diet will develop a sodium deficiency. It is also unlikely for a potassium deficiency to occur by dietary means because it is found in a wide range of foods.

Protein
