Many ingredients can be added to bread in addition to the basic ingredients of flour, water, leavening agent and salt to increase its nutritional value. Flax, sunflower, caraway, pumpkin seeds, buckwheat, amaranth, millet, barley, soy, lentils, and other cereals may also be added. Omega-3-fatty acids (found in certain seeds) are beneficial for decreasing the risk of heart disease, vascular disease, cancer and immune malfunction. The right amount of sunflower seeds added to the bread mix can supply significant amounts of zinc, calcium, magnesium and vitamin B6. The use of sea salt in bread is another way to enrich its nutritional value, as it is a source of trace minerals, whereas table salt contains only sodium, chloride, and iodine (due to addition). The addition of sprouted grains and seeds to bread enhances its nutritional value dramatically. Sprouted wheat was found to increase in vitamin A content ten fold in seven days, while vitamins B2 and B12 increased between two and ten times, and vitamin C content increased rapidly as well.
