Shasha is the founder and CEO of ShaSha Co. Shasha grew up spending much of his time in the kitchen with his mother and grandmother baking bread. Believed to be the cornerstone to every meal, these early teachings were the inspiration for Shasha to expand his knowledge and creativity to open a bakery.
Shasha discovered his knack for bread making after combining his background in microbiology to perfect his baking skills at Toronto’s George Brown College. Graduating in 1991 with a Culinary Management diploma, he would later become an advisor at George Brown. Working almost every job in the restaurant industry, from pastry chef to chef consultant, he decided to devote his efforts to something he was truly passionate about – opening an artisan bakery.
Shasha launched his artisan bakery in June 1998 renting bakery facilities after hours. He sold small batches of organic sourdough products and would later develop the renowned heart-shaped ginger snaps. Within eight months, he moved the operation to a 750-square-metre plant in Etobicoke, Ontario, manufacturing about 3,500 units of fresh bread and baked products a day serving customers throughout Canada and the U.S. Shasha continues to be a student of food chemistry visiting over 25 countries to discover new techniques and ingredients to better meet the needs of our customers seeking a well-balanced and healthy lifestyle.
Shasha is also the founder and President of the Artisan Bakers’ Quality Alliance (ABQA), responsible for stamping authentic artisanal products with a seal promising no chemical additives, preservatives, fats, oils, sugars or genetically modified ingredients. The ABQA and its 34 member companies continue to raise the profile of artisan bakers and educate consumers about natural and organic ingredients.
Today, Shasha continues to search for solutions to obesity, diabetes, allergies and other illnesses by changing what we eat and put the nutrients back into nutrition!
