Take 450g of mung beans, adzuki beans or lentils and soak in cold water for a minimum of 7 hours.
Using 4 litres of boiling water, blanch mung beans and lentils for 5 minutes and the adzuki for 12 minutes. Drain and rinse with cold water.
Puree grains using a blender and add olive oil, lemon juice, garlic, paprika, salt and pepper.
