Meatless Monday Recipe: Sprouted Grain Hummus

This delicious Hummus dip makes for a wonderful snack with lavash or crackers, it makes a terrific starter with fresh raw veggies or as a  spread on wraps and sandwiches. Happy Meatless Monday! INGREDIENTS

  • 450g of sprouted Bio-Bud™ grains (Mung, Adzuki, or Lentils)
  • ¼ cup olive oil
  • 1/2 cup lemon juice
  • 1 tsp. garlic
  • 1 tsp. paprika
  • Salt and pepper to taste

INSTRUCTIONS

Soak 450g of mung beans, adzuki beans or lentils in cold water for 7 hours.

Using 4 litres of boiling water, cook mung beans and lentils for 5 minutes and the adzuki for 12 minutes. Then rinse under very cold water for three minutes.

Puree grains using a blender and add olive oil, lemon juice, garlic, paprika, salt and pepper to taste.

Spread on toasted Spelt bread or Lavash.
